I was a bit skeptical when a local manufacturer in Singapore was crowned the winner of the world's best instant noodles. Prima Taste's Laksa La Mian had apparently trounced many other competitors to win the award.
I cooked three packets over the weekend at one go for three persons. Each packet was cooked individually over a small metal pot on a gas stove.
The thing with instant noodles is they are mostly boring. You need to jazz it up with some things like fried shallots, garlic and onions.
Here's how I did mine.
Heat up the pot and throw in some sliced garlic and shallots. Add some oil or butter to sizzle. Tear open the Laksa paste mix and pour it in. Fry till fragrant. Add water from the bowl which you are serving on later. This will give you a good estimation of the amount of water needed.
The noodles in the pack are huge and hard. They need about 8mins of medium heat to soften up nicely. But prior to dumping it in, don't forget to stir in the premix powder. Put the noodles in gently, less they splash. Be careful of the soup boiling over.
I find that the resulting Laksa gravy could make do with a bit of soy sauce, so in goes half a teaspoon. Add in some fishballs or fried fishcake, a hardboiled egg and some Laksa leaves and bean sprouts.
Finally, I added some XO shrimp sauce which I bought from HKG recently. Great stuff. World best. Undoubtedly.
